Sweet Potato Pie
Ingredients
For the Crust:
2 8″ pie pans
4 Tbsp melted butter
1 10.6 oz box of Walkers Shortbread Petticoat Tails, crushed (1 Tbsp. set aside for garnish)

For the Filling:
2 lbs sweet potatoes
4 Tbsp butter, cut into chunks
2/3 cups sugar
2/3 cups packed light brown sugar
1/3 cup honey
4 Tbsp Orange Juice (or orange flavored liqueur like Grand Marnier)
2 eggs
1/2 cup flour
1 1/4 tsp ground ginger
3/4 tsp nutmeg
3 tsp cinnamon, plus more for dusting pie
1/2 tsp salt
2 tsp vanilla extract
1 tsp almond extract (optional)

Preparation Instructions
Preheat oven to 350 degrees. To prepare the crust, crush the shortbread cookies into fine crumbs using a food processor or crushing with fingers with the bag unopened. In a small mixing bowl, add the melted butter to the crumbs and mix until combined. Divide the cookie mixture into the 2 8″ pie pans. Press crumbs flat and evenly around with metal cup or finger tips. Place cookie crust in oven for 4-6 minutes or until golden. Set aside and cool.

To prepare the filling, place sweet potatoes in a pot and fill with water high enough to cover potatoes. Bring the water to a boil and let boil until potatoes are tender enough to stick a knife through it easily. Drain the water out of the pot. Skin the potatoes while they are hot, for easier removal. Cut potatoes into rough chops and put back into the pot. Mash potatoes until partly smooth with a potato masher or fork (there will still be lumps).

Put potatoes in a mixing bowl, add the butter and mix with an electric mixer, electric beater, or spoon until butter has melted. Add sugar, brown sugar, honey, orange juice until fully incorporated. Add eggs and mix until fully incorporated. Add flour, ginger, nutmeg, cinnamon, salt, vanilla extract, and almond extract (if using) and beat until smooth.

Pour the mixture into the cooled cake pans. Sprinkle pies with remaining cookies and dust top of cake with additional cinnamon. Bake pie on center rack for 45 minutes. Let pie cool before serving.
